How is medium grain rice different from long grain rice? As with long grain rice, the shorter and wider medium grains start with an outer hull which is removed in the milling process along with the bran layer and polished to perfection. This smaller pure white grain, only 2 to 3 times longer than it is wide, is known for its moist, tender and slightly sticky cooking qualities. That’s why medium grain rice is a favorite for dishes with a creamy consistency like rice pudding, risotto and even sushi. Producers’ medium grain rice is enriched with vitamins and minerals, naturally gluten free, non-GMO and cooks in just 15-20 minutes.
